Colombia Manos Juntas Natural | Sotara Cauca (Single Origin Filter)
CUP: Ripe Berries, Cacao, Winey, Brown Sugar
Manos Juntas is a micromill in Colombia’s Cauca region, operated by Banexport. The mill was created to allow producers to focus on growing healthy coffee trees and harvesting ripe cherries, while Banexport’s team manages the more technical stages of fermentation, drying and storage.
Freshly harvested cherries are delivered directly to the micromill, where their Brix and pH are measured before being placed into sealed tanks for a five-day anaerobic fermentation. Nitrogen is introduced to stimulate yeast activity, while the fermentation is carefully monitored to determine the ideal stopping point.
For this natural lot, the coffee remains inside the whole cherry and is aged in tanks for an additional five days. The cherries are then transferred to solar dryers and slowly dried for approximately 30–45 days, helping to build a concentrated, fruit-driven cup profile.
In the cup, expect ripe cherry sweetness, a rich winey character, soft cacao depth and a rounded brown sugar finish. The acidity is expressive and boozy rather than sharp, with a full body and a lingering sweetness as the coffee cools.
