This coffee was grown by Sebastian Gomez at his Finca La Divisa. Harvested following strict ripeness criteria, the cherries are then floated and hand-sorted to remove any defects. Cherries were sundried for 12 days and covered over night until ideal moisture content was achieved.

This microlot is 100% Castillo, which is a variety developed by Federación Nacional de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust, which allows farmers like Sebastian to grow their trees with confidence and a higher chance of high quality cherries.

We find notes of Sugarcane, Passionfruit and Sweet Toffee in this cup!
