Jhonaton Gasca is a new-generation coffee producer from Huila, Colombia, reshaping his family’s legacy through innovation and sustainability. Rooted in the tradition yet driven by unwavering curiosity, his coffees balance precision with a fresh sense of what’s possible for the industry. Raised in Bruselas, Jhonatan shifted from a quantity-first mindset after studying ecological agriculture and returning from a near-professional soccer career. Under the Zarza Coffee name, his washed process is anything but standard. Ripe cherries are hand-picked, floated, sealed for 24-36 hours, pulled, open-fermented, then finished with a thermal shock wash to stablise both sugars and aromatics. Alongside biodiversity initiatives like beekeeping, Zarza Coffee delivers elegant coffees loved all over the world.
