ABOUT
This lot was grown by Jose Diaz and Ismael Aguilar, two dedicated small-scale producers who have collaborated with our export partner, Caravela, over recent years. These motivated and like-minded young farmers bring intentionality and clear purpose to both the cultivation and processing of their coffee.
Semi-washed coffee processing is a method where the outer skin of the coffee cherry is removed, but part or all of the sticky fruit layer (mucilage) remains on the bean during drying.
During the early days of Seven Seeds, coffee from El Salvador was a core staple on our menu. Though various factors led us away from it over time, our sourcing team is dedicated to re-establishing a connection with this amazing origin. Offering a delightfully fruity, textured, and sweet cup, this lot makes a wonderful addition to our spring menu.
