What 36th Parallel Specialty Coffee Roasters say
This unique Sumatra Mandheling offers a medium-bodied cup that is perfect for espresso, cold brew, or filter brewing. The earthy depth and spiced undertones make it a standout choice for those who enjoy a coffee that’s both bold and intriguing.
Our Mandheling coffee showcases the best of the Arabica beans grown in the Tapanuli region of Sumatra. Named after the Mandheling people who have been producing coffee here for generations, this coffee is grown with care and attention to quality. The farmers of the co-op receive training in tree management, pest control, pruning, and selecting only the ripest cherries to ensure the highest quality possible.
In addition, sustainable practices are a priority, with a focus on soil conservation to prevent degradation and erosion and to improve soil health. Once harvested, the coffee undergoes a 12-hour fermentation process before being dried for 2-3 days, depending on weather conditions. After reaching 30% moisture, it is hulled and then dried further to the optimal 11% moisture content to prevent spoilage during storage.
This Sumatra Mandheling is a coffee full of character, perfect for those who appreciate a cup with depth, complexity, and a memorable finish.
Different coffees, different outcomes. We shape each roast curve to suit how the coffee will be brewed and what we want in the cup. Espresso needs structure and weight. Filter rewards clarity and precision. Same raw coffee, handled differently to get the best out of it.
Built on a steady, controlled roast curve with a longer development phase to create body, sweetness, and depth. Balanced and full, with softened acidity and a clean, consistent finish. Designed for espresso, but equally at home on filter and used for both. Same coffee, just a different expression.
Built on a lighter, faster roast curve with shorter development to retain clarity and structure. Brighter, more expressive, with higher acidity and a cleaner finish. Designed for filter brewing where detail and separation matter.
