What 36th Parallel Specialty Coffee Roasters say

NICARAGUA MARAGOGYPE The “Elephant Bean” with a gentle voice.

Maragogype is famous for its size. Enormous beans. Long, curved, light in the hand. Yet the flavour is surprisingly soft, never loud or aggressive. It tastes like slow mornings. Sunlight just starting to move across the table.

Expect a rounded sweetness through the cup. Gentle acidity that doesn’t poke or bite. Notes drift toward milk chocolate , hazelnut , and soft vanilla . A hint of dried apricot or orange blossom may show up as it cools. The mouthfeel feels silky, almost weightless, like the coffee is floating across the palate rather than pushing.

This is a coffee that doesn’t need to shout. It charms. Slow sip after slower sip.

Tastes Like: milk chocolate, hazelnut, and soft vanilla

Different coffees, different outcomes. We shape each roast curve to suit how the coffee will be brewed and what we want in the cup. Espresso needs structure and weight. Filter rewards clarity and precision. Same raw coffee, handled differently to get the best out of it.

Built on a steady, controlled roast curve with a longer development phase to create body, sweetness, and depth. Balanced and full, with softened acidity and a clean, consistent finish. Designed for espresso, but equally at home on filter and used for both. Same coffee, just a different expression.

Built on a lighter, faster roast curve with shorter development to retain clarity and structure. Brighter, more expressive, with higher acidity and a cleaner finish. Designed for filter brewing where detail and separation matter.
