These coffee cherries were picked by small farm holders spread across the land of Cauca, Colombia. After harvest, selected coffees are sorted to remove any unripe or hollow cherries. They are then transported to DESCAFECOL, where they are milled and put through a sugar cane decaffeination process. A by-product of sugar cane fermentation is used as a caffeine solvent in this process. Green beans are steamed after harvest to open up their pores, soaked twice in this solution for up to 8 hours. They are then steamed again, polished and dried to be exported. This process is becoming more popularized due to its ability to sustain the fruity qualities of the coffees, allowing roasters to better manipulate the balance between caramel and fruits. You won’t know that you are drinking a decaf coffee!

This recipe is a good place to start, but we recommend fine-tuning it to suit your taste and machinery.

Welichu Wachu draws on wet and natural processed coffee from a number of coffee growing zones. All the coffees from one of the 36 grower co-operatives, each farmer cultivating coffee in what’s known locally as ‘coffee gardens.’ Each farmer grows roughly 1000 to 1800 trees per hectare, the plants are mostly fertilised with organic material and intercroped with various food crops. This type of farming accounts for roughly 50% of the coffee grown in the regions.

Popayán is located in the department of Cauca at 1.700 m.a.s.l. This region’s topography is perfect to grow exceptional coffee! The so-colled Meseta de Popayan is sheltered by the Andes mountain range which helps generate homogeneous climatic and altitudinal characteristics. The result is a balanced cup profile with floral and caramel notes.

We collaborate with approximately 65 growers who contribute to this program and with whom we build longer-term relationships. This program also encourages farmers to focus on quality and based on quality assessment we can provide up to 20% premium above the market price.

Grown in the Western Highlands Waghi Valley. Like the majority of PNG coffee this is grown by small farms. Ideal soils, rainfall and climate in this region ensure good growth and output from the trees. Cherries are processed at the Korgua wet mill for washing, drying and sorting. At each of these stages, quality control is monitored to ensure this coffee continues to build its reputation.

Careful and planned logistics ensure that the coffee is transported and warehoused correctly prior to shipment; essential to preserving the integrity and quality of the beans.
