For this lot, Luz Helena has selectively picked only the best, ripest cherries and then meticulously sort to remove any low density or defective cherries. Afterwards, the cherries undergo a 30hr underwater fermentation to enhance the coffee's flavour profile. This process allowed for a slower breakdown of sugars and organic acids to develop a very interesting flavour profile.
