Finca El Encanto
Tucked into the high, cool hills of Primavera in Huila, Finca El Encanto is the work of producer Fabian Muñoz, who established the farm in 2018 with a focus on growing distinctive, high‑quality varieties in a region best known for its rich volcanic soils and exceptional cup profiles. Fabian’s 3‑hectare farm sits at 1930 MASL, an altitude that slows cherry maturation and encourages the dense, complex development that Pacamara is known for. His approach combines careful manual work in the field with simple, precise processing techniques that protect the clarity of the variety.
FERMENTATION
All coffee at El Encanto is manually hand‑picked, ensuring only ripe cherries move into processing. Fabian uses a mechanical depulper at the farm, followed by a traditional washed process, with controlled fermentation in concrete tanks. Once clean, the coffee dries slowly on patios and raised beds, allowing the final cup to retain structure, sweetness, and aromatic detail.
