What Industry Beans say

The Mantiqueira region in Brazil differs from other growing regions in the country, with generally smaller producers, higher altitudes, and more diverse terrain. This results in fantastic coffees with more complex, fruit-forward flavour profiles. We’ve sourced from this farm in previous years and love highlighting just how good Brazilian specialty coffee can be.

Fazenda Ondas da Mantiqueira was established in 1850. The farm’s current owner, José Nicácio Itagyba de Oliveira, oversaw its conversion to organic production, helping to protect both the soil and the waterways that pass through the property. Seven mineral springs crisscross the farm.

Coffee cherries are selectively handpicked so that only ripe fruit is harvested - a rare practice in Brazil, where most coffees are mechanically harvested. The farm has complete processing infrastructure to produce both fully washed and natural coffees.

The farm’s drying terraces are carefully organised to ensure full traceability. Once harvested, the cherries are spread out to dry and turned frequently to promote even drying.

This coffee offers delicate fruit sweetness with a smooth, balanced finish. Combined with a mellow, comforting milk chocolate body, it makes for an exceptionally drinkable cup.

The term 'single origin' refers to coffee that is from a specific farm or geographic region. Single origins allow drinkers to experience and enjoy distinct flavours and characteristics of those regions.

Whats the difference between filter roast and espresso roast?

We roast our filter coffees more lightly, for extraction through slower brew methods like pourover, aeropress, and cold brew. We roast our espresso roasts for a longer time, allowing the beans to develop bolder, richer flavour that come through as as a stronger brew.

Our filter single origins can be brewed through various methods, including Pourover, Batch Brew, Aeropress, French Press and Cold Brewers.

That's completely up to you! As a good starting point, 500g of coffee a month can make about 1-2 cups of coffee a day. And as you get to know your usage and purchase higher quantities, you'll enjoy better pricing.
