Our Single Origin Sleepy Bear Decaf comes from the rolling highlands of Chiapas, Mexico - a region with some of the oldest and most storied coffee farms in the country. Here, wedged between the Atlantic and Pacific, lush mountain slopes of the Sierra Madre Chiapas create dramatic microclimates that practically spoil coffee plants with ideal growing conditions.

The farm is called El Motmot , named after the stunning motmot bird often spotted flitting through the trees - a colourful local resident known for its vibrant tail and laid-back personality (a perfect mascot for a decaf, really).

And when it comes to decaffeinating this coffee, producers do it the way nature intended - with more nature. The beans make a little trip north to Veracruz, where the Mountain Water Process takes place using pristine, glacial meltwater from Pico de Orizaba - Mexico’s tallest mountain and the third highest peak in North America. No harsh chemicals, no shortcuts.

The coffee is soaked in clean mountain water, gently drawing out the caffeine while preserving the bean’s natural flavours. That same water is filtered to remove only the caffeine, then reintroduced to the coffee - keeping everything you want, and nothing you don’t. The result is a full-flavoured, chemical-free decaf that tastes just as good as the real deal.

In the cup, you’ll get flavours of panela and rich milk chocolate with a smooth toffee apple finish - comforting, satisfying, and free of any jittery aftershocks.

A cup so good, it doesn’t feel like a compromise - more like a delicious loophole.
