About This Single Origin

Colombia El Diviso Bourbon Aji | Anaerobic Natural | Filter Roast Only

CUP:  Floral, Pineapple, Baby Mint, Lemongrass

Finca El Diviso is a family-owned specialty coffee farm located in Bruselas, near Pitalito in Huila, southern Colombia. Managed by third-generation coffee producer Néstor Lasso together with his brother Adrián and the wider Lasso family, the farm represents a new generation of Colombian producers combining family coffee-growing knowledge with a highly precise, experimental approach to quality.

The farm is situated at roughly 1,750–1,900 metres above sea level in the Colombian Massif. Its high elevation, cool nights, stable microclimate, and nutrient-rich volcanic soils allow coffee cherries to mature slowly. This extended maturation supports greater sugar development and helps create the sweetness, clarity, and layered fruit character associated with El Diviso’s coffees.

El Diviso began as a traditional coffee farm, but in recent years the family has shifted its focus towards specialty micro-lots and distinctive cultivars. Their work includes Ombligón, Pink Bourbon, Bourbon Sidra, Geisha, Chiroso, and other selected varieties. Rather than treating all cherries in the same way, the team separates lots according to variety and ripeness, then adjusts fermentation and drying methods to highlight the particular character of each lot.

In the cup, El Diviso coffees are often vivid and aromatic, with profiles ranging from florals and tea-like notes to tropical fruit, berries, citrus, stone fruit, and honeyed sweetness. Natural and anaerobic lots may show a more fruit-forward and wine-like character, while washed lots can be especially transparent, elegant, and structured. Because the farm produces a broad range of varieties and processing styles, the final profile can vary significantly from one micro-lot to another.
