What Modus Coffee say
Meet Elias Roa, a dedicated producer from Huila, Colombia. Alongside his wife Bellanid, daughter Derlin, and son in law Diego Campos (a Colombian Barista Champion), Elias grows exceptional coffee at Finca Tamana in Pital. Working with heirloom varieties linked to African origins, he uses careful techniques including dry fermentation, fresh water washing and slow drying on raised beds to ensure each bean expresses its full origin.
This lot is decaffeinated using ethyl acetate, a naturally occurring compound found in fruits like bananas. Through a gentle and thorough method, the caffeine is removed while the vibrant character of the coffee is preserved. The result is a clean and flavourful decaf that reflects the same care and quality as the Roa family’s regular harvests. A cup full of sweetness, structure and clarity — minus the buzz.
