This HCS Regional coffee undergoes a systematic 3 stage process: The first is washing and disinfecting of cherries upon arrival to the processing station, with removal of green / immature beans as well as leaves, stems and dirt. The second is an oxidation stage for 24 hours before depulping and rinsing off the mucilage. Finally, the third is controlled and homogenous mechanical drying process. Our South Colombia HCS series stands distinctly superior in cup profile and complexity.
