What Wood and Co Coffee say
SAN FERMIN — COLOMBIA
WASHED · CATURRA, COLOMBIA, CASTILLO
The producers of San Fermin are resilient, focused, joyful and family driven. They work on the farm as a family with every member contributing to some aspect of the farm - drying, keeping records of production, administration and more. This joint venture creates a tight bond in the families, who work in conjunction to improve their quality of life and produce great coffee.
Since San Fermin started, the life of the producers has changed for the best with the production of high-quality coffee, having a better quality of life and living conditions. Some of the producers have even bought more land to expand their production.
Traditionally the varieties they started working with were Castillo, Typica, Caturra and Colombia. Now the varieties that are produced, from greater to lesser volume, are Castillo, Colombia, Caturra, Typica, Bourbon, Tabi, Gesha and Catimore. With the recent effects of climate change and the heavy rains of 2021 onwards, the producers keep their resilience, adapt to the new conditions and strive to produce great quality coffee. These coffee farmers have begun to implement environmentally friendly practices at their farms, for example planting native trees for shade but also for minimising their carbon footprint and installing a water filtration system to treat the wastewater of the wet mill.
San Fermin is coffee with pronounced citric acidity, sweetness of bright fruits, milk chocolate and nutty notes, with a medium body and balanced finish.
