Tasting Notes: Soft floral notes, delicate fruit like sweetness think apricot and peach finishing with juicy acidity.

This coffee comes from the Chelchele washing station, which is in the Yirgacheffe region. With special prep coffees the cherries are collected from a limited number of small holder farmers. 90% of the cherries are picked perfectly, 5% semi red and the other 5% over ripe. The coffees are stored separately from other lots.

The coffee is picked and depulped on the same day and usually there is a fermentation period of 8-12 hours in open air tanks. The coffee is then washed in water channels to remove the mucilage and spread on raised beds to dry for 5-15 days.
