Criteria Coffee

Criteria Coffee roasts in Melbourne and was founded in 2018 by Craig Simon, a three-time Australian Barista Champion with over two decades in the coffee trade. Craig and the team roast the coffees themselves. Most of the beans are single origins, drawn from Ethiopia, Colombia, Brazil and Kenya. The Luis Aníbal Calderón Yirgacheffe is a natural from Huila, Colombia, with green melon, pink guava and violet notes, and it costs $29 per 100g. A Colombian decaf has green grape, pear and brown sugar notes. Other roasters also sell coffee from Luis Aníbal Calderón, Danilo Barbosa and Cachoeira Farm.
