We’re incredibly excited to share this standout experimental coffee from Colombia — a bold expression of innovation and flavour.

This unique co-fermented lot is created by fermenting freshly harvested coffee cherries with real strawberries and wine yeast. During fermentation, the fruit sugars and selected yeast strains interact with the coffee, enhancing aromatics and amplifying sweetness. The result is a cup layered with intense jammy strawberry notes, creamy sweetness and soft florals, all balanced by a bright, lively acidity.

It’s a striking, fruit-forward profile that’s often compared to strawberry yogurt, strawberry cream or even candy — vibrant, aromatic and unmistakably memorable. A true showcase of how creative processing can transform the coffee experience.

For this lot, only the ripest cherries were harvested. The cherries are transported to the La Pradera processing center in grain pro bags or special tanks to preserve their freshness. Once cherries arrive at La Pradera, the cherries are first floated in water tanks to remove any lowdensity beans or foreign materials. The water used in this stage is recycled for additional batches and, once no longer suitable for use, is filtered through a series of specialized tanks before being irrigated into vetiver grass beds and released as oxygen. This sustainable filtration system ensures that no contaminated water is discharged, maintaining our commitment to environmentally friendly practices.

Then, the cherries undergo a dry anaerobic fermentation process for 72 hours with the pulp on. During this stage, ripe strawberries and wine yeast are added to the fermentation tanks. The strawberries transfer their sweet, fruity flavors to the coffee, while the wine yeast enhances the fermentation process, producing aromatic compounds that add complexity and depth. This combination creates a vibrant and layered flavor profile, with notes of ripe strawberries, tropical fruits, and wine-like undertones.
