Produced by third-generation farmers Oscar and Francisca Chacón at Las Lajas Micromill, this San Isidro lot highlights innovation in Costa Rican specialty coffee. To control quality, the pair developed Alma Negra, a natural process where cherries dry in a greenhouse for 2–3 days, then rotate between daytime sun on raised beds and night-time greenhouse piling to slow curing. The cup highlights notes of white grape, toffee, and caramel.
