*We roast every Tuesday. All orders placed before Monday 12:00 pm (AEST) will be roasted and fulfilled that Tuesday. All orders placed after that will be roasted the following week.

Israel is a third-generation coffee farmer. He is a humble and dedicated farmer in the pursuit of quality. He was taught at a young age by his father to care for coffee plants and produce great coffee. He later went on to own his farm while daydreaming of owning the farm that was across from his. After many years and disciplined hard work, Israel bought that farm. He has since dedicated himself to growing and producing exclusively specialty-grade coffees. In 2016, he planted Gesha to focus even more on the pursuit of great coffee. In 2020, he placed 4th in the Cup of Excellence, an extremely profound achievement. This Gesha lot is amazing and a reflection of the time, energy and dedication it takes to produce great coffee.

This microlot is 100% Gesha. This varietal was first discovered in Abyssinia, Ethiopia in 1931. Gesha was planted in Panama for the first time in 1963 and in Colombia in 2005.

Espresso Recipe: 1:3 ratio

In: 20 grams dry dose

Out:  60 grams beverage weight output

Time: Contact time of 30+ seconds

Filter Recipe: 1:17 ratio

In: 20 grams dry coffee

Out: 330 grams brewing water

Time: 3:00-3:30 minutes
