Introducing our latest Limited Release coffee…
Ethiopia Guji, Wine Process.
Hailing from the high-altitude farming district located in the Oromia Guji zone of southern Ethiopia, this coffee demonstrates skilled farming at its best.
Welcome to wine processing. This process begins by hand-picking only the ripest cherries, selected for their higher sugar content. The cherries are then placed into sealed barrels, fermentation tanks or bags fitted with a one-way valve, where they ferment for 4–5 days.
While inside, temperatures are closely monitored and kept at a stable 25 degrees. At this point, the coffee goes through CO2 flushing, causing oxygen to release, leaving a build up CO2 to help ferment the coffee in its own juices and mucilage.
After the pressurised tank fermentation, the coffee is then sun-dried on raised beds for 15 days before being milled.
What you get: a banger of a coffee with wilder, juicier flavours. By turning up the processing on an already exceptional coffee, the result is a cup with more intense, fruit-forward, wine-like notes that highlight the coffee cherry's natural character.
