Complex and quaffable filter coffee with subtle layers of cooked fruits and chocolate - not too bright, just right. Expect great aroma, smooth body, and moreish finish in your pour-over, V60, or drip setup.
Cerro San Luis Micromill in Grecia, Costa Rica is family run by siblings Alexander & Magali Delgado and their spouses. After harvest, cherries are brought to the home micromill for processing. Dried by the Yellow Honey Process the cherry skin is removed while 25–75% of the sweet mucilage remains, drying in direct sunlight until it oxidises to a golden yellow hue. As is common at mills in Costa Rica, at Cerro San Luis the type of honey (white, yellow or black) is decided by how much mucilage is left on the coffee after depulping.
