It’s no surprise that Santa Monica produced such a remarkable expression of Chiroso. First discovered in the cool, high-altitude mountains of Antioquia, this rare Colombian variety quickly gained recognition through Cup of Excellence competitions for its vibrant florals and complex fruit character. At Santa Monica, Jairo Arcila and his team selectively hand-pick only the ripest cherries before meticulously sorting and floating them to ensure exceptional quality. A final 45-hour aerobic fermentation and slow drying on raised beds over 8–12 days gave this lot its intense sweetness, juicy fruit notes, and silky full-bodied finish.
