The Lasso brothers are a farming duo unafraid to redefine the limits of coffee cultivation and processing in pursuit of the perfect cup. Case in point: this rare Ombligon lot, a variety named for the word ombligo (belly button), describing the cherry’s unusual shape. Quintessentially Huila, it showcases bright cherry acidity while still being smooth on the palate. Nestor and Adrian build on that profile with a thermal shock process, priming the beans for a 38-hour anaerobic fermentation with yeast. The result? Enhanced notes of candied strawberry and fruity sweetness.
