Washing Station: Harsu Sala
Harsu Sala sits in Uraga, a district of Guji that has become one of Ethiopia's most sought-after areas for washed coffee over the past decade. The station was established around fourteen years ago by Bisrat Melaku and runs as a community project, taking hand-picked cherry from smallholders farming the surrounding highlands. Cherries are density-sorted on arrival, then given a long underwater ferment before being dried slowly on raised beds — an unhurried approach that shows up in the cup as clarity. Expect soft peach sweetness, a bright citrus lift, and a creamy white chocolate finish that carries well through milk.
