About the Producer
Located in the highlands of Tunía, Piendamó in Cauca, Finca El Paraiso has become globally recognised for its advanced and highly controlled approach to coffee processing.
Surrounded by fertile volcanic soils and native biodiversity, the farm combines traditional cultivation with modern fermentation science to create coffees that are highly expressive while remaining exceptionally clean.
Diego Bermudez and his team focus heavily on microbial control, precision fermentation and carefully managed processing stages, allowing them to consistently push flavour development into new territory.
About the Lot
This lot follows an Advanced Washed Thermal Shock process, designed to maximise fruit clarity and floral intensity while preserving structure and cleanliness in the cup.
Fully ripe cherries are selectively harvested before undergoing washing, sanitation and carefully controlled fermentation. Multiple washing stages refine the profile further, while slow controlled drying helps preserve the coffee’s delicate aromatics and silky texture.
The result is a beautifully refined filter coffee with bright tangelo citrus, elegant peach oolong tea character and lifted osmanthus florals, all tied together by a juicy sweetness and polished finish.
Complex yet incredibly clean, this is a coffee that feels both technical and deeply expressive at the same time.
