What The Maillard Project say
Finca Las Tres Aguas, owned by Pintado Huamán Milquiades, is located in San Ignacio, Cajamarca, Peru, at 1,700 metres above sea level. The region’s high elevation, fertile soils, and favourable microclimate provide ideal conditions for specialty coffee production.Harvesting is carried out by hand, with only ripe cherries selected. The coffee is fermented in bags for 35–40 hours before being washed and dried for approximately 15 days in specialised drying modules, under cover, or on traditional pampillo beds. Once dried, the coffee is carefully stored to protect it from moisture and preserve its quality.
Sustainability plays an important role on the farm. Pintado uses practices such as mechanical weeding, living barriers to prevent erosion, and organic inputs including compost and goat guano to maintain healthy soils and support crop growth.More than just a coffee farm, Finca Las Tres Aguas is at the heart of Pintado’s family and community life. His dedication to coffee production is closely connected to his goal of creating greater opportunities for his children while preserving the traditions and strong community spirit of the region.
Cajamarca is Peru’s largest coffee-producing region, accounting for around 25% of the country’s coffee production. Its high Andean elevations and fertile tropical landscape offer significant potential for specialty coffee, with many smallholder producers embracing organic farming and increasingly working together to improve quality.
