What The Maillard Project say

The Odakko Project from Yaye Washing Station is a remarkable example of intentional coffee production and innovation. Built in 2021, Yaye has quickly become known for its commitment to quality, precision, and experimentation. This project is the result of four years of collaboration and pre-harvest planning between Testi Coffees and Cafe Imports, with the goal of creating a highly traceable, single-variety coffee that expresses a truly unique flavour profile.Produced by 50 smallholder farmers from the neighbouring villages of Yaye and Chericho, this lot features the 74518 variety, grown at high elevations between 2150 and 2300 MASL. Only carefully selected cherries from peak harvest were used, ensuring exceptional ripeness and clarity in the cup.

Quality control is at the heart of this coffee’s production. At Yaye, every step of processing is approached with meticulous cleanliness, from washing equipment and drying beds to using potable water for cherry cleaning. After harvest, the cherries are floated to remove defects, then hand-sorted to a strict ripeness standard before being dried slowly on raised beds for 28 days under shade nets in a cooler, windier area of the station. This extended drying process allows for greater flavour development and stability.After drying, the coffee is rested for six weeks before milling, further preserving its structure and complexity. The result is a beautifully expressive cup with jammy red fruit notes, dark chocolate richness, red wine–like acidity, and a gentle sugary sweetness.

This Ethiopian Premium natural lot is produced from a small group of carefully selected smallholder farmers and processed separately for exceptional quality and traceability. With 90% perfectly ripe red cherries and a small portion of semi-ripe and overripe fruit for added complexity, the coffee is often harvested as a single day lot to preserve consistency. The cherries are then sorted, rinsed, and slowly dried on raised beds for 8–25 days, developing a cup with vibrant fruit sweetness and layered depth.
