This washed Pink Bourbon lot was produced by Gilma Zúñiga on her farm Finca Villa Vista, situated over 1900 metres above sea level in the mountainous San Agustin region of Huila, Colombia.
At Finca Villa Vista, Gilma and her family primarily cultivate Catimor, Colombia, and Bourbon varieties, with the coffee trees intercropped with plantain, avocado, and citrus trees for shade.
Coffee processing on the farm is a shared effort within the Zúñiga family; Gilma oversees the pulping and drying processes, while her son assists with the washing stage. The process involves two stages of fermentation, the first in cherry, followed by another in dry fermentation tanks.
In the cup, this coffee tastes like black plum and blood orange, with earl grey tea undertones.
