What Deluca Coffee say
The family focuses on quality and experimentation, with careful separation of lots and processing carried out right at their home mill. Freshly harvested cherries are depulped and dried first on raised beds, then moved to covered patios and turned regularly until perfectly dried. The Yellow Honey process leaves a touch of mucilage on the beans, creating sweetness and complexity in the cup.
Best Brew Date: 7-35 days after roasting, within 14 days of opening
Cerro San Luis Micromill is a family-run project led by siblings Alexander and Magali Delgado and their spouses. Their farms and micromill sit in the West Valley near Grecia, where they cultivate a wide range of coffee varieties.
