Colombia El Indio Tolima Caturra Natural Filter - Single Origin
Tolima is known for it's steep mountains, cool climate and rich volcanic soils, ideal conditions for growing coffee. It's one of Colombia's most productive regions and a regular presence in Cup Of Excellence, reflecting the dedication of it's growers.
This coffee comes from a group of coffee-growing associations in Tolima made up of about 175 farming families. Since 2019, our green coffee supplier, Cofinet, has worked closely with these farmers, providing technical support to help them master natural processing. Thanks to this partnership, most of the growers now process at least 80% of their coffee using the natural method.
Once the farming teams hand-pick the very best cherries, the fruit is dried naturally in the sun. The producers monitor the cherries closely, checking on the drying process four times a day to make sure everything dries evenly and hits the exact right moisture level.
