What Mad About Beans say

Smooth and strong, sweet with chocolate and cacao notes combined with some tangid acidity and orange notes; full and round body with a lingering aftertaste

A coffee that wakes you up in the morning whilst not feeling overwhelmed with a smooth flavour.

This is another one where we wanted to go a little bit deep and also have something special, given it's the name of our first blend. Zeitgeist refers to the general intellectual, moral, and cultural climate of an era. We thought that's pretty appropriate for our first blend. And similar to our Purzelbaum, having the letter "z" in the word always results in a smile when it comes to pronunciation.

Cooperative – Productores orgánicos de la zona alta de Ixtlan and Yednekachew Seleshi Alemu / Geda Bali Farms /Buliye Washing Station

This is MABs first blend. Combing the full body of our Hampelmann with the fruity and clean taste of our Purzelbaum, this is the perfect cup for all day round.

Hampelmann coffee is similar to your current About the coffee Oaxaca, bordering Chiapas to the south and descending from central highlands to the Pacific Ocean shores in the west, is rich in volcanic nutrients and ample moisture. Hailing from the Ilan de Juarez region in Oaxaca, this coffee is produced by Productores Organic de la Zona Alta de Ixltlan.

Established in 2006, the cooperative, comprising multiple farms, priorities meticulous farming processes. Harvested manually, this fully washed Yellow Caturra lot is pulped on the same day as harvest. The beans then rest in wooden crates or concrete tanks, before initiating fermentation process. During fermentation, the tanks are often covered with nylon for ideal temperature maintenance.

Process monitoring commences after 12 hours, while the duration ranges from 12 to 24 hours. The coffee is then dried on concrete patios and sometimes blankets until it reaches 11 to 12% humidity, followed by dry milling to remove the parchment.

The cooperative makes strides in community and environmental impact. Workforce training, led by a coffee production specialist, ensures adherence to the best practices. Social initiatives include fair wages, anti-discrimination policies and respect for human rights. The organisation also promotes soil conservation, bans herbicides, prohibits tree felling and conserves water sources. This coop also has organic certification.

Purzelbaum is created in the villages of Dari Kojuwa and Geda Baili which are located in the in the Hambela Wamena district of West Guji, Oromia, bordering the renowened Gederb Yirgacheffe district. The regions are celebarted for their high altitudes and organically rich soils, which together create the ideal conditions for cultivating some of the world's finest coffees.

Respective vertically integrated washing stations collect ripe cherries from farmers in the surrounding areas, ensuring only the best produce makes its way to you. Coffee grown in Ethiopia is naturally organic, as landrace varieties harmonise with the enironment that provides a natural environementg for pest control and fertiliser. Coffe grown in these areas are considered to be mixtrue of Heirloom varieties, native to Ethiopia, the birthplace of coffee.

After meticulous handpicking, overripe and unripe cherries are carefully sorted out, leaving only the finest red cherries. These cherries are then spread on raised drying beds and sun-dried under controlled conditions. To ensure uniform drying, they are turned frequently throughout the day until they achieve the optimal moisutre level of 10.5%. This meticulous process preserveas the beans' unqiue flavour profile and quality.
